Yummy
I tried out a new cookie recipe last night...they are very yummy! They have all of the things that make a good cookie...chocolate chips, oatmeal, and peanut butter. They are also very chewy, which makes them even better!
Peanut Butter Oatmeal Chocolate Chip Cookies
1 cup all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup (1 stick) unsalted butter, softened at room temperature
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/3 cup light brown sugar (I accidentally put 1/2 cup and they still turned out, but I guess most people want less sugar, not more:))
1/2 tsp vanilla
1 egg
1/2 cup rolled oats
1 cup semi-sweet chocolate chips
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
Mix together flour, baking soda, and salt in a medium bowl. Set aside.
Using a mixer, cream butter, peanut butter, granulated sugar, brown sugar, and vanilla for about 3 minutes. Add egg, beat until mixed. Add flour mixture slowly on low speed. Stir in oats and chocolate chips.
Scoop dough (about 1 tbsp size scoops) onto prepared cookie sheet. Bake about 10 minutes, or until lightly golden. Put on wire rack to cool.
